“Saveurs Olfactives” at Pavyllon Monte-Carlo
In June 2026, Saveurs Olfactives arrived at Pavyllon Monte-Carlo, the restaurant of Yannick Alléno within the Hôtel Hermitage. Created through the collaboration between the chef and Xerjoff founder Sergio Momo, the project explores how fragrance and cuisine can express the identity of a city through scent and taste.
Following Paris, Dubai and London, the Monte Carlo chapter introduced a culinary creation inspired by Cruz del Sur I. The fragrance’s rich, distinctive character provided the starting point for an experience that brought together Xerjoff’s perfumery and Alléno’s contemporary approach to French cuisine
The Dish and the Fragrance
The Monte Carlo creation centres on the relationship between the dish and Cruz del Sur I. Before tasting, guests lift a bespoke ceramic cloche to discover the fragrance, allowing its aromas to introduce the flavours of the culinary composition. This olfactory ritual places perfume at the heart of the dining experience.

The Monte Carlo Launch
The launch welcomed journalists and invited guests to discover the collaboration in the setting of the Hôtel Hermitage. With Sergio Momo in attendance and the dish personally prepared by Yannick Alléno for its debut, the evening introduced the Monte Carlo interpretation of Saveurs Olfactives.
The photographic coverage follows the presentation and tasting, documenting the atmosphere of the event and the encounter between its creators and guests.
